2000 Beetle 2.0: Engine temp light on dashboard

My engine temp light is coming on sometimes. Red flashing. The first time, it also beeped three times, but it has not done that since. Has come on three times now.

Turning the heater on full alleviates the problem - light goes off w/in about 30 seconds.

Light seems to come on after driving for a short while, esp in stop/go traffic.

    Have checked:
    - coolant level is midway between max/min when engine is cool
    - V-belt looks fine
    - fans come on when car idles (after driving about 10 minutes mostly highway)
    - fuse is not blown

So...this leaves us thinking that it's the thermostat. Did I miss something else? Any other suggestions? I am really interested in fixing this myself rather that having the dealer do it. Any suggestions appreciated!

Coolant level ok, fan functioning. I'd be suspicious of the waterpump impellor starting to fail or maybe the temp sensor. The waterpump seems to be, in my mind, the culprit and might not be pushing enough coolant through the system to keep the temperature stable.

Thanks for the reply! Is there a way to test the water pump or system pressure to see if it is or isn't working right? Or do I just have to replace it and see if that helps?
