I recall reading something about our cars having electro-something or other steering. Now since that is true, could we then somehow adjust our steering sensitivity to make it a little more sporty and responsive, if not than any thoughts on how you would do it using aftermarket parts?

I don't know about the Rabbit(the Rabbit's steering it's electric), but on my ex Jaguar it was possible to adjust the stiffness of the steering.

Steering is adjustable through VAGCOM I believe. There's a thread about it on Vortex. Although by the looks of it, the people who did bother adjusting it went back and preferred the factory setting.
Personally I wish that the steering was a little tighter too. I don't like turning the wheel 2-3 times over just to make a turn at low speeds. I'd rather have super sensitive, but stiff steering. At times I wish I could rip the leather wrapped steering wheel off of my old Focus (with its tighter steering ratio) and throw it into my Rabbit. I'd be heaven if I could do just that.
